Application of Value Stream Mapping in Hotel Services

The article presents the use of mapping value streams in the hotel industry. The first part presents lean management as a leading modern management concept and discusses the types of waste produced by both manufacturing and services. Hotel services are characterised and the method of mapping value streams, which is applied on the example of a family hotel, is described. The processes associated with the formation of value for hospitality services are then presented, along with a map of the stream of present and future value. The processes involved are analysed and the possibility of improving them discussed. Finally, the value streams analysed are compared and the conclusions are presented.
